My understanding has always been that the use of the individual copy is up to the owner of that copy. With the item on reserve, the professor and the students cannot make simultaneous use of the item, as there is only one of it. (The students photocopying chapter after chapter is a different matter all together, though not one technically the responsibility of the library.) Rather like those software licenses that permit you to install the software on more than one computer as long as you will only be using one at a time, like a lap top for portable use and a desktop for office use.
