You can only register the copyright in the name of the owner. The author is the initial owner. The copyright can be registered by the author or by anyone to whom the author transfers the copyright, or any of the exclusive rights that come with the copyright. The copyright in a collection of essays and articles belongs to whomever the authors of the essays and articles have granted the right to publish their essays and articles in the collective work. That could be any legal entity with authority to accept a transfer of rights from the authors of the included works, and to publish the collective work, but a fan club would be an unlikely choice because they tend to be inadequately capitalized and haphazardly organized.

In short, the question is not what name should you 'copyright it under,' but who should own and manage the publishing rights. That is ordinarily the person who is paying for the printing and distribution, or the person who receives an advance against royalties from the person who is paying for the printing and distribution. It is a business decision -- not a legal decision.
