At amusement parks, when they have videotape or film crews out, they put up a sign at the entrance telling you that they might be filming (for commercial purposes) and that entering the park that day means you consent to the use of your image, etc., etc. I'm sure the lawyers on this list know what needs to be said.
Whether this is *all* you need to say is something I can't answer.
BTW, it's nice to hear from so many educators and others concerned about copyright under various scenarios. I hope that means the public at large is more aware of copyright issues and wants to learn.
