Barring any agreement to the contrary, the copyright of a book written by both a ghostwriter and the "author," would belong to both as joint authors.

Of course, joint authorship always depends on all the facts and circumstances surrounding the creation of the work, so the answer may vary depending on those facts. If the authors are joint, then any contract to transfer copyright to you would have to be with both.
